We have had several bad experiences with restaurants when we order guacamole. It seems that many places add dairy to their guacamole to stretch it. After one too many times of getting sick, unless it is made in front of us, we don’t order it.
But that doesn’t mean that we stopped loving guacamole. I just needed to come up with a recipe that we loved. And this one is it. I could eat it with a spoon, it is that delicious.
Guacamole made with fresh avocados, tomatoes and cilantro is absolutely spectacular. It takes just a few minutes to put together this recipe which is so worth the effort.
Serve it with our grilled fish tacos as well as our roasted tomato and corn salsa for a delicious and festive meal.

- In a medium bowl add olive oil, 2 tablespoons of red onion and 2 tablespoons of cilantro and muddle.
- Add the avocados and onion; using two spoons crisscross together gently to mash the avocados.
- Add the tomatoes, cilantro, lemon juice and salt - stir together gently to incorporate ingredients.
- We recommend letting the guacamole chill for 1 hour before serving.
- Serve with tortilla chips and enjoy!
* You can use any kind of hot pepper you like or omit entirely, this should be done to your preference.
