These Breakfast Berry Parfaits are such beautiful treats with layers of lady fingers, berries and cream. The combination of flavors and textures is just delicious. I am always thinking about ways to get my children involved in the kitchen. I always have lots of helping hands when I makes trifles. There is something about ripping up cake that makes them very happy.
Even though it can make a mess, I encourage their participation. These parfaits are easy enough for them to build all by themselves with very little adult help.
As a matter of fact, I may or may not bring up the subject of these parfaits right around Mother’s Day. The ingredients are always available and ready to go for them to be as creative as they like. Just in case they decide to surprise me.
All silliness aside, these parfaits are not only delicious for breakfast, but are perfect for brunches or any spring celebration when you want a refreshing and light dessert.
I like to make up a dozen of these parfaits for our family brunch and when the weather is hot, these parfaits really do hit the spot.

- 12 lady fingers dairy free, if also gluten free use gluten free lady fingers
- 3 Cup dairy free greek yogurt plain or your preferred flavor
- 1 Cup dairy free whipped topping
- 5 Tbsp berry jam your preferred flavor
- 2/3 Cup orange juice
- 1 pint berries your choice, cleaned and sliced

- Break lady fingers into small pieces. Set aside.
- Mix yogurt and non dairy whipped topping together. Set aside.
- Combine berry jam and orange juice, stirring until completely combined. Set aside.
- Assemble parfaits: In each serving glass, place several small pieces of the lady fingers. Spoon 1-2 tablespoons of berry jam mixture over the lady fingers. Layer with 1/3 cup of the yogurt mixture and with 1 tablespoon of berries. Repeat layers until serving glass is full.
- Cover securely with plastic wrap and refrigerate for 4 hours or overnight.
- If desired, when serving, top with additional non dairy whipped topping, berry jam mixture and sliced berries.
