Butternut Squash Soup
Creamy and lightly sweet, this butternut squash soup is perfect on a cold winter’s day.

  1. In a dutch oven or large pot, heat stock and water over medium heat.
  2. Add roasted butternut squash and sweet potato mix and cannellini beans to the pot and heat.
  3. Once the ingredients are heated through, with an immersion blender, blend until creamy and smooth. If you do not have an immersion blender, carefully pour small quantities of the hot soup into a heat safe blender and blend until smooth. Transfer blended soup into a large bowl and continue until all the soup has been blended.
  4. Serve immediately. If desired, serve with a dollop of dairy free sour cream or greek yogurt.
